Souped out and a Wednesday recipe: Potato, chorizo & green pea soup

Desde hace una semana como sopa todos los días*… It is almost true, but it was a sentence O came up with for my Spanish homework after he has come home to soup for dinner on Monday, Tuesday and today :D To my defence I actually did make two mini-quiches as well on Monday – one with salmon, gorgonzola (we have almost finished all the stolen cheese now) and feta, and the second one with just tomatoes and feta. The main reason for the soup “diet” has been that I have had a cold and didn’t feel like eating heavy meals…

However, I can understand that O is starting to think that maybe I should change the menu since he made fish soup on Saturday, which we had for dinner / lunch during the weekend, and then I made a similar, but not as good fish soup on Monday… You see, he makes his own fish stock, and opened a bottle of white wine, which I felt was too extravagant for a Monday morning!

Anyway, my soup obsession started already last week when O told me that I should eat more soup, instead of burgers since I had some stomach cramps… So, I did as he told me and had a lovely spicy potato soup in Olive Garden (American restaurant chain) but the pea and ham soup I tried in Tim Horton’s (Canadian fast-food chain) wasn’t very good at all. And whatever you do, avoid the chicken soup in Fuddrucker’s (I was so proud though that I didn’t fall for temptation and had a burger in my favourite burger place) – disgusting!

Nevertheless, I thought that I would share with you my latest soup** creation – today’s recipe turned out quite yummy!  

Potato, chorizo & green pea soup
1-1½ litre water
½ yellow onion if American size, otherwise one whole
5-6 potatoes (I love potatoes and like my soup to be quite thick, O thought it was almost like a stew in the end)
chorizo or salami – we only had pre-sliced sandwich chorizo which I chopped up in quite small pieces, but normal dry chorizo works just as well and you decide how meaty you want the soup
green peas – a handful of frozen ones
1 cube of vegetable stock

Add all the ingredients at once, except for the peas and let boil / simmer for approximately 30 minutes. Add the peas straight from the freezer right at the end. Serve with some bread.
Soup makes excellent leftovers that can be reheated in portions if needed (O came home late tonight). I will have my last soup-day tomorrow with the leftovers and then enough already!

 

*) Since one week I am eating soup every day
**) I have such a problem remembering that it is sopa in Spanish, confusing it with zuppa in Italian so I keep wanting to say supa (maybe that’s Portugese, ha ha) – trying to remember that it is almost the same word as in Swedish (soppa) minus one P. But I guess that you can see why I am confused when the two languages (Spanish and Italian) are so close…
