The following recipe is one of my parents’ big favourites – and I am not the P that the name refers to, but it is the recipe of one of my best friends, P No 1 (I am P No 2!). P No 1, who is French, and I studied together in Venice in 2000 and we became very good friends when we both lived in Geneva in 2002. Even though I left Switzerland to move to Brussels, we have managed to meet up a few times every year – either in Brussels, Geneva or any other destination where there is a girls’ weekend (a henparty in Venice, a luxurious weekend in the south of France, a cold weekend on the Danish island of Mön, or getting lost in the potatofields of Skåne) or a wedding (France, Belgium, Denmark, Sweden-Norway)! And almost exactly a year ago we went to Milan for a weekend.
Anyhow, she has also celebrated Christmas and New Year’s in Sweden, back in 2003 and one evening she made a dinner for the whole family to thank us for hosting her. Of course she didn’t need to do that, everybody enjoys her company, but the starter definitely made a long-lasting impression on my parents who make this salad ever so often! It is funny because P claims that she just made it up and hasn’t made it since…
P’s Citrus & Avocado Salad
1 lemon – only the juice
salt & pepper
Cut all the fruits in salad sized pieces, squeeze some lemon juice on top and add the coriander (as much as you’d like, it has a very strong flavour), salt and pepper and olive oil. Add some shrimp, if you want to make the salad more filling.

I don’t know if P is covering the CERN news story today (as she works in a news agency) but I think it is pretty exciting what’s going on over in Switzerland / France at the moment – especially as I actually visited the site in 1995 and was even allowed to go down underground (it felt like being in a James Bond film!)…
